Ingredients:

  • 1 cup millets
  • 2 cups water
  • Salt to taste
  • 2 cups cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup lemon juice
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Rinse the millets several times and drain.
  2. Bring the water and salt to a boil in a medium saucepan. Add the rinsed millets and stir to combine.
  3. Reduce heat to low, cover the saucepan, and let the millets cook for about 20-25 minutes or until they are tender and the water is absorbed.
  4. Transfer the cooked millets to a large mixing bowl and let them cool.
  5. Add the cherry tomatoes, cucumber, red bell pepper, red onion, and parsley to the bowl with the millets.
  6. In a small mixing bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
  7. Pour the dressing over the millet and vegetable mixture and toss to combine.
  8. Chill the salad in the refrigerator for about 30 minutes or until it is cold.
