Ingredients:

For the crust:

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. To make the crust, in a large bowl, whisk together the millet flour and salt.
  3. Cut the butter into the flour mixture with a pastry cutter or your fingers until it resembles coarse crumbs.
  4. Gradually add the ice water to the flour mixture and stir until a dough forms.
  5. On a lightly floured surface, roll out the dough into a 9-inch (23 cm) pie plate.
  6. Trim the edges of the dough and prick the bottom of the crust several times with a fork.
  7. Bake the crust for about 10 minutes or until lightly golden.
  8. Whisk the eggs, heavy cream, salt, and pepper in a sizable basin.
  9. Stir in the grated cheese and chopped vegetables.
  10. The baked crust should now contain the egg mixture.
  11. Bake the quiche for about 25-30 minutes or until the eggs are set and the top is lightly golden.
