Millet Pilaf
Millet Pilaf is a flavorful and nutritious side dish made with cooked millets and a mix of spices and vegetables. Here is a simple recipe for making millet pilaf:
Ingredients:
- 1 cup millets
- 2 tbsp oil
- 1 tsp cumin seeds
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 carrot, diced
- 1 cup frozen peas
- 2 cups chicken or vegetable broth
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped (optional)
Instructions:
- Rinse the millets several times and drain.
- A large pot should be heated over medium heat. Let cumin seeds crackle.
- Cook the chopped onion and minced garlic until the onion is translucent and soft.
- Add the diced carrot and frozen peas to the pot and cook for about 5 minutes or until the vegetables are tender.
- Add the rinsed millets, chicken or vegetable broth, salt, and pepper to the pot and stir to combine.
- Bring the mixture to a boil, then reduce heat to low, cover the pot, and let the pilaf cook for about 20-25 minutes or until the millets are tender and the liquid is absorbed.
- Fluff the pilaf with a fork and serve hot, garnished with fresh parsley if desired.
