Millet Pulao
Millet Pulao is a tasty and nutritious dish made with cooked millets and a mixture of spices and vegetables. Here is a simple recipe for making millet pulao:
Ingredients:
- 1 cup millets
- 2 cups water
- Salt to taste
- 1 tbsp ghee or oil
- 1 cinnamon stick
- 2 cardamom pods
- 1 bay leaf
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 cup chopped carrots
- 1 cup frozen peas
- 2 cups chicken or vegetable broth
- Salt and pepper to taste
- 1 tsp lemon juice
- Fresh cilantro, for garnish
Instructions:
- Rinse the millets several times and drain.
- In a small saucepan, heat the water and salt until they are boiling. Add the rinsed millets and stir to combine.
- Reduce heat to low, cover the saucepan, and let the millets cook for about 20-25 minutes or until they are tender and the water is absorbed.
- In a large skillet, heat the ghee or oil over medium heat. Add the cinnamon stick, cardamom pods, and bay leaf and cook until fragrant, about 1 minute.
- Cook the onion and garlic together for about 5 minutes, or until the onion is tender.
- Add the carrots and peas and cook until the vegetables are soft, about 10 minutes.
- Stir in the cooked millets and broth, and bring the mixture to a boil.
- Reduce heat to low, cover the skillet, and let the millet pulao simmer for about 10 minutes or until the liquid is absorbed.
- Salt and pepper to taste, then incorporate the lemon juice.
- Serve the millet pulao hot and garnish with fresh cilantro.
