Millet Salad
Millet Salad is a healthy and flavorful dish made with cooked millets and a mix of fresh vegetables and herbs. Here is a simple recipe for making millet salad:
Ingredients:
- 1 cup millets
- 2 cups water
- Salt to taste
- 2 cups cherry tomatoes, halved
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1/2 cup fresh parsley, chopped
- 1/4 cup lemon juice
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Rinse the millets several times and drain.
- Bring the water and salt to a boil in a medium saucepan. Add the rinsed millets and stir to combine.
- Reduce heat to low, cover the saucepan, and let the millets cook for about 20-25 minutes or until they are tender and the water is absorbed.
- Transfer the cooked millets to a large mixing bowl and let them cool.
- Add the cherry tomatoes, cucumber, red bell pepper, red onion, and parsley to the bowl with the millets.
- In a small mixing bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
- Pour the dressing over the millet and vegetable mixture and toss to combine.
- Chill the salad in the refrigerator for about 30 minutes or until it is cold.
